RECIPE
- ½ tablespoon of minced fresh rosemary
- ½ tablespoon of minced fresh thyme
- 2 finely minced cloves of garlic
- 3 tablespoons of olive oil
- 1 pound of lamb chops
- salt and pepper to taste
For the Salad:
- 1 seeded and small diced cucumber
- 3 seeded and small diced vine ripe tomatoes
- ½ peeled and small diced red onion
- 2 tablespoons of finely chopped fresh parsley
- ½ cup of finely chopped baby spinach
- juice of ½ lemon
- ¼ cup of crumbled feta cheese
- 2 tablespoons of olive oil
- salt and pepper to taste
Serves 2
Procedures:
- Lamb: In a bowl whisk together the herbs, garlic and olive oil and coat the lamb chops on all sides in the mixture. Marinate in the refrigerator for at least 1 hour or overnight.
- Heat a grill pan over medium-high heat and sear the lamb chops until golden brown and until the desired internal temperature is achieved, about 3 to 5 minutes per side for medium-rare.
- Salad: Combine the ingredients together in a large bowl. Chill before serving.
- Serve the lamb chops over top of the tomato-cucumber salad.
